Clear Flour Bread, located at 178 Thorndike Street in Brookline, MA, specializes in the authentic breads & pastries of Italy, France, Germany and the UK. Every boule, batard, pan loaf and gruyere croissant are baked fresh daily by founder Christy Timon and her dedicated team.

Using flour, water, salt, yeast, and various natural sourdough cultures they scratch, mix and hand shape long fermented doughs for stone hearth baking. They use no dough conditioners, preservatives or improvers of any kind. And although their breads are international, they source all of their rye, whole wheat, oats and other specialty grains from Maine Grains in Skowhegan Maine, only 200 miles away.

The authentic taste – that patrons say “they can’t find anywhere else” – comes from Christy and her husband/co-owner Abe Faber’s passion for the baking art and learning straight from the source. Christy & Abe have traveled the world to learn baking recipes and techniques to bring back to Brookline. They also host international pastry chefs and help put on baking conferences around the country.

Although Clear Flour Bread prides itself on producing baked goods you cannot find anywhere else in New England, there’s a strong chance you have already tasted their bread: that’s because they are a large provider of breads & dinner rolls to restaurants in the Greater Boston area (explains the urge to fill up on just the bread!).

How ALL CPAs Helped:

In the early days, when Clear Flour Bread was a growing small bakery, Abe was told by their accountant that they were required by the IRS regulations to make a major change. This adjustment would have been massive, eating up funds crucial to running the business. Determined to keep the bread rising, he sought a second opinion.

Abe found his answer in ALL CPAS Principal Bruce A. Gold, CPA. Bruce advised Abe & Christy that although the other approach was preferred, the modification was not required, and prepared an argument supporting the status quo, should it be challenged.

No adjustments were needed or ever made. Abe Faber said, “Now, if we had to make a change, it would be just money, but back then, it was the difference between continuing to run the business or closing the doors.”

Since their first fateful meeting, Clear Flour Bread has worked closely with Bruce and ALL manager Jen Sieczkowski to help grow the bakery. Abe says they enjoy having accountants they trust and with whom they have had long-term relationships. It allows Clear Flour Bread to focus on what they love, the bread.
